Ingredients for Crab and Tomato Ravioli:

Pasta dough

Filling for Crab and Tomato Ravioli:

  • 5 Egg yolks
  • 200g White crab meat
  • 5 tbsp ‘00’ pasta flour
  • 2 large Heritage tomatoes
  • A few drops Extra virgin olive oil
  • 1 Lemon
  • Pinch of Sea salt
  • Basil Leaves
  • 1 tbsp Crème fraiche

Garnish for Crab and Tomato Ravioli:

  • 10 Tomatoes
  • 1 bunch Basil
  • Glug of Grape seed oil
  • 100 ml water
  • 2 Courgettes
  • Glug of Extra virgin olive oil
